Description

This balsamic vinegar of Modena “Estensis Nobilitas” is a vinegar that uses the native Trebbiano grapes. After removing the grape juice, it is baked so as to evaporate the water and becomes a syrup: cooked must. This is then poured into oak barrels and allowed to stand for at least three years, and is mixed with balsamic vinegar in order to begin the process of acidification. The Bellei family has been using this process for over 400 years. It has a distinctive and penetrating aroma. Suitable for salads and all vegetables.
