The hindquarter hocks from heritage bred Wessex Saddleback pigs are hot smoked to perfection. Hocks contain a lot of collagen-rich connective tissue, and smoked hocks add a wonderful rich and silky mouthfeel as the collagen renders out in the cook. Amazing in all kinds of hearty broths and soups or simply served with sauerkraut and knödels. Great with a big stein of Hefeweizen.
